This might be the EASIEST and most kid friendly recipe that I’ve shared thus far! Do I have your attention?!?!? Luke helped me measure, mix and finish this fun little treat in about 15 minutes. I adapted this recipe from Skinnytaste and The Wholesome Dish.
Ingredients:
- 1 1/2 c quick oats
- 3 T peanut butter
- 1 T unsweetened flaked coconut
- 1 T roasted cocoa nibs
- Pinch of cinnamon
- 1 overripe banana
Add all ingredients to a large bowl and mix well with your hands. It should be a slightly sticky consistency to roll into balls. If it’s too wet, add more oats. Roll into 1 inch balls and place in fridge for a few hours until chilled and solid.
If you want a touch more sweetness, add 1 teaspoon of honey. My peanut butter had honey in it, so I skipped added honey. You could also use crushed up chocolate chips if you don’t have cocoa nibs on hand. Nibs are my new favorite Trader Joe’s find! If you have a nut allergy, use seed butter, and adjust oats to get the right consistency.
