I’ll let you in on a little secret: I have a love affair with my crockpot. I love her. She’s efficient, beautiful and makes life superb (much like us hot mamas).
The beauty of slow cooking is whatever you put in there is going to be delicious; it doesn’t matter if you are a novice in the kitchen or a domestic goddess. I use it 2-3 times per week, put together the ingredients in the morning (or night before), turn it on low in the AM and dinner is ready—easy peasy!
The other reason I adore my girl is I often double recipes, and freeze leftovers for later. I label the frozen meal with blue painters tape with meal name and date. Life saver!!!!!

I make the taco seasoning myself in order to control the sodium, but use the premade packet if that works for you. You can also vary the recipe a bit and it still tastes FAB! Add fresh garlic, use fire roasted tomatoes, use all black beans, add chopped green pepper, whatever you have on hand—it will always be a home run! I serve this bowl of chili deliciousness with a dollop of nonfat plain Greek yogurt and a sprinkle of Mexican cheese. ENJOY!
