Fit Foodie Friday: Summer Berry Salad with Goat Cheese and Pecans

This is, by far, my favorite salad! The sweetness of the berries blends really well with the tart, earthiness of the goat cheese. Nom nom nom! This recipe is based on 1 serving, however, it is so easy to quadruple and that’s what I usually do for meal prep for my lunches throughout the week. My husband likes goat cheese, but it isn’t an obsession of his (like it is mine). Good cheese makes the world go round, after all!!

If you are prepping the salad to use for later, wait to add the pecans, olive oil and vinegar until prior to eating. I use 4 cup round Pyrex dishes to prep all of my salads.

  • Baby lettuce (spring mix or spinach works well too)
  • 1/4 c thinly sliced fresh strawberries
  • 1/4 c fresh Blueberries
  • 2 T crumbled goat cheese
  • 2 T pecans (I like TJ candied)
  • 1 t balsamic vinegar
  • 1 t olive oil
  • Salt and pepper, to taste

Combine all ingredients and drizzle with the oil and vinegar. I usually let the salad sit for a few minutes to let the balsamic start getting happy with the berries! You can add a protein to this salad, and I’ve found grilled chicken, salmon or shrimp work best! I’ve also had this with plain quinoa for a meatless dish and it was scrumptious! Lastly, raspberries, blackberries and dried cranberries are awesome in this salad. I tend to use what’s in season or what I have on hand.
