We love a good taco salad in the Baer house, and this one fits the bill! It’s healthy, filling and easy to use to meal prep lunches for the week. I usually serve it for dinner, then portion the leftovers in smaller containers for the upcoming week.
- 1 lb ground turkey
- 15 oz can refried beans
- 4 oz can diced green chilies
- 8 oz can tomato sauce (I LOVE El Pato)
- 1 Small onion, diced
- 2-3 cloves garlic, minced
- 1/3 c chicken stock or water
- Taco seasoning (I make my own, but the packet works too)
- Homemade Taco Seasoning:
- 2 T cumin
- 1 T chili powder
- 1 t oregano
- 1 t onion powder
- 1 t garlic powder
Brown turkey in larger pan or pot until fully cooked. Drain fat. Add in onions and garlic, and cook 1-2 minutes, then add tomato sauce, seasoning, stock (or water) and diced chilies. Mix, and cook on low about 5-8 min, or until the liquid has evaporated a bit.
Heat refried beans according to directions on can. Now you can build your salad! Romaine, tomatoes, salsa, nonfat Greek yogurt, shredded cheese, avacado.... whatever you like! Add a heaping spoonful of beans and meat on top and enjoy!
This meat/bean mixture is also great for tacos, enchiladas, burritos or nachos.
