Easy Mexican Breakfast Burrito

Sometimes, we just need a little extra energy to get through the day. This breakfast burrito is so easy to put together and it uses staples that you probably already have in your fridge and pantry. You can also add leftover veggies to this to give an extra punch to this yummy breakfast! The basic burrito recipe is as follows:

  • 1 whole grain burrito shell
  • 2 T refried or black beans
  • 1 T salsa
  • 2 T shredded Mexican style or cheddar cheese
  • 2 eggs, scrambled
  • 1/4 sliced avocado or 1 T guacamole

Spread your tortilla with the beans and heat in the microwave for 30-45 seconds. Scramble your eggs and add things like diced red pepper, cooked butternut squash or spinach to your scramble, if you like. Place cooked eggs on the tortilla and add the other ingredients. Add a few dashes of hot sauce if you like it caliente! Roll up your burrito and enjoy, beautiful mamas!
