Fit Foodie Friday: BBQ Grilled Shrimp

Summer is winding down, but that doesn’t mean grill season is ending! We love grilling shrimp as they are so versatile and take on whatever flavor you choose;). I gave these beauties a BBQ flavor and they turned out delicious. I typically buy large, uncooked frozen shrimp from Costco, and take out a bunch the night before to defrost in the fridge. Rinse well, pat dry, then get to work!

  • 1-2 pound fresh or frozen, defrosted shrimp
  • Olive oil
  • Salt, pepper or whatever seasoning you like
  • 2-3 T BBQ sauce

Preheat grill to medium heat. Toss shrimp in olive oil just enough to coat and your seasoning. Place shrimp directly on the grates and brush on a light layer of BBQ sauce. Let cook 2-3 min, then turn. Brush other side with the sauce and continue cooking until the shrimp are pink, with slightly charred tails. These cool fast, so check them often.

You could eat these as an appetizer (would be great on game day), in a wrap, on a quesadilla, in a burrito or taco, on top of a salad or just over brown rice with a veggie on the side! We are ours over corn and black bean salsa with avocado! Happy grilling!
