Fit Foodie Friday: Broccoli Cheddar Soup

Rainy winter nights call for a comforting soup, and broccoli cheddar is a staple soup in our house! It’s super easy in the Instapot or other pressure cooker as the cooking time is sped way up instead to simmering on the stove. I followed the recipe exactly as written, but substituted 2% milk for whole, and only used 2 cups of sharp cheddar. It’s a thicker soup, so feel free to add an extra cup of stock for a thinner consistency. Omit the cayenne pepper if a little kick of spice is not your jam. Enjoy, lovely mamas! Muah! Xo
