Fit Foodie Friday: Caprese Salad

As we say goodbye to summertime gardens, we see our last weeks of seasonal produce such as tomato and basil. One of my favorite simple salads is the caprese. I feel like I’m dining al fresco at a cafe in Italy.... sigh. Anyhoo, slice your favorite garden or farmers market tomato, and fresh mozzarella from your fav cheese section. Next, layer the tomato, basil leaves and mozzarella in a circle or in straight lines. It’s super pleasing to the eye. Lastly, drizzle liberally with your favorite EVOO, salt and pepper. Let sit for 10 or so minutes to give the flavors a chance to get happy together. Serve right away with something from the grill, as a side to pasta or as your main dish with a crusty hunk of bread to sop up all of the goodness! Muah! xoxo
