Fit Foodie Friday: Classic BLAT

Summertime boasts the most amazingly ripe and juicy farmer’s market tomatoes and freshly grown lettuce, so that is why I only make BLATs (bacon, lettuce, avocado, and tomoato!) in the summer and early fall! They are a quick, filling and easy dinner for those busy and warm summer nights, and they taste even better on your patio or deck with a side of fresh watermelon or basic pasta salad. This recipe makes 2 sandwiches, but just double for a family of 4!

  • 4 slices whole wheat toast
  • Avocado mayo or classic mayo
  • 6 slices bacon, crispy (turkey or pork)
  • Leaf lettuce - 4 large pieces
  • Sliced ripe tomato
  • 1/2 ripe avocado, sliced thinly
  • Salt and pepper to taste

Spread both sides of the toast with a thin layer of mayo. Stack toast with lettuce, tomato, bacon and avocado, then sprinkle with salt and pepper. Enjoy, beautiful mamas! Soak in every moment of our PNW summer:). Xoxo
