Fit Foodie Friday: Coconut Lime Quinoa

am obsessed with quinoa and eat it several times per week. This is a cool and easy way to change up a classic staple. It’s 3 simple ingredients: quinoa, coconut milk and lime. I did this in the Instapot, but there are also directions for a rice cooker. It turned out so flavorful and creamy with a hint of sweetness! I served it with grilled salmon and mango salsa. You could also serve this with shrimp, mahi mahi or chicken plus any veggie!!!!!
