I’m obsessed with quinoa as it is super tasty, my 5 year old eats it and it’s a great rice/pasta swap! This recipe has three ingredients and can be used in many different dishes. Use your Instantpot or rice cooker and this comes out fluffy, moist and full of flavor!
I served this with two meals: salmon with asparagus, and a base for black bean burgers with pico de gallo. You could also use this in a salad, as a base for curry, burrito bowl, Thai or Asian cuisine, or as a simple “rice” side dish with a protein and veggie! The coconut milk adds so much richness, along with the lime and zest, which gives the quinoa a nice fresh pop of flavor! I think this will be one a staple in your kitchen! Muah, lovely mamas!
