Fit Foodie Friday: Grilled Sausage and Peppers

This dish is such a classic Italian comfort food from my East Coast home, but I’ve put a healthy spin in it, where you don’t lose any of the flavor and it is surprisingly light and very satisfying. It’s served over quinoa instead of rice, pasta or on a roll. This dish works best with an outdoor grill, but you could also use an indoor grill or grill pan!

  • Chicken or turkey sausages (I used chicken & apple)
  • Mini assorted bell peppers
  • 1/2 large red onion, cut into large chunks
  • Cooked quinoa

Score the sausages so they don’t explode while cooking ;). Grill sausages until slightly charred. Grill peppers and onions until they are starting to blister and slightly blackened. We put our onion chunks on a skewer to keep them in place. When cool enough to handle, slice sausage into coins and cut off tops of peppers. Serve over cooked quinoa.
