It’s warming up this week, and it’s a great time to get outside and GRILL! These shrimp tacos were super quick and easy, and I made it even easier by buying pre-made fresh mango and pineapple salsa (instead of the avo salsa in the recipe.)
I used Costco frozen shrimp, defrosted them overnight, and marinated them for about 15 minutes before popping them on the grill. They cook really quickly, so don’t go far. Fresh lime is the star here - it adds a beautiful brightness and fresh pop! I heated up the corn tortillas on the top rack of the grill, then assembled the tacos. This marinade would also be amazing if you wanted to build a taco shrimp salad or burrito bowl. Miss you all and can’t wait to see you soon!
