Fit Foodie Friday: Homemade Almond Butter

We LOVE the snow and have had so much fun sledding and being outside. When we come inside to warm up, inside time calls for experimenting in the kitchen. Enter the easiest almond butter ever!!!!!

I am slightly obsessed with almond butter. I use it on whole grain toast and English muffins, in smoothies, and on apple slices. Luke eats it in tortillas as well. We eat it every single day. I love the Costco brand as it is natural and so very tasty, but decided to experiment with making my own. It was a cinch and so much fun! You seriously will not believe how easy it is and how delicious the final product is.

  • 2 cups of unsalted almonds, roasted
  • Olive oil
  • Salt

If your almonds are unroasted, I suggest roasting them as it really adds a yummy slight smokiness to the finished product. Roast in a 375 degree oven for 10 minutes. Let cool completely. Put almonds in a food processor and grind for 5 minutes, until the nuts release their oil and become smooth. Add a teaspoon or so of olive oil if you like a thinner consistency and a pinch of salt. Store in the fridge and enjoy! xoxo
