I’m such a huge fan of Mexican and Southwestern cuisines! The flavors are so delectable and classic, I try to find new recipes which highlight those flavors of cumin and garlic. Carnitas are my go-to order when out to eat and I decided to experiment with this recipe and it was a huge hit! The limes and orange add an amazing citrus flavor, and the spices that are rubbed into the pork are simple perfection!
I followed this recipe exactly as written and served on corn tortillas with homemade pickled onions, jalapeño, cilantro, a squeeze of fresh lime and cojita cheese. Using the instant pot cuts down your cooking time and helps tenderize the meat; it literally falls apart. These carnitas could also be used in burritos, enchiladas, quesadillas, a taco salad or burrito bowl. They also make great leftovers! Yum yum, beautiful mamas. Muah! Xoxo
