Fit Foodie Friday: Instantpot Salsa Shredded Chicken

Mexican and Southwestern cuisine are staples in our home, and this easy salsa chicken is so versatile, it can be cooked ahead for meal prep, and used in a variety of ways through the week! It only has a few ingredients, and cooks in less than 30 minutes. I love the ease in which a pressure cooker adds flavor quickly, while keeping the meat nice and tender.

I followed the Skinnytaste recipe exactly as written. When the chicken completed it’s natural release, I added a can of drained and rinsed black beans and cooked corn I had leftover in the fridge. I served it over romaine and brown rice. You could also use this for tacos, burritos, quesadillas, salads or create a burrito bowl like I did! Enjoy, beautiful mamas!
