Soup season is upon us!!!! A former Body Back coach introduced me to this recipe and we are hooked. It’s oh so comforting and this soup is super easy because you literally toss everything in your pressure cooker and hit GO!
I followed the recipe as written, but also added a sliced leek as I had one in my produce drawer. ;) Make sure you use wild rice, not any other varieties. Also, if you prefer a less creamy soup, skip adding the roux at the end. The wild rice adds a nice texture and thickens the soup naturally. We enjoyed this filling soup with a big chunk of warmed baguette!
