Fit Foodie Friday: Nectarine, Blueberry and Goat Cheese Salad

Summertime is all about the SALADS! With the fresh, seasonal produce we have available to us all spring and summer long, I use what’s currently in season to create the easiest and yummiest lunches and dinners! This salad can be made ahead with the dressing on the side, or make and serve at mealtime and add any protein you like to create a full dinner—chicken, salmon or shrimp!

  • Baby greens, 2 c packed
  • 1 nectarine, rinsed and diced
  • 1/2 c blueberries, rinsed
  • 1/4 c pecans or walnuts
  • 2 T crumbled goat cheese
  • 1 t Olive oil
  • 1 t balsamic vinegar
  • Salt and power to taste

Place all items in a bowl and drizzle with oil and vinegar right before serving. This recipe makes 1 salad, but is easily doubled or tripled for more servings.
