This quick salad is a great way to detox after heavy holiday meals, and also use up leftover turkey and roasted veggies. It also adds the delicious seasonal flavors of pear and pomegranate seeds.
This salad serves two, so double it for a family meal or pot luck!
- 4 c spring mix
- 1 pear, diced
- 1/2 c blueberries
- 1/4 pomegranate seeds
- 2-3 T crumbled goat cheese (or feta)
- 2-3 T pecans or walnuts
- 2 T balsamic vinegar
- 2 T olive oil
- Any leftover roasted vegetables
- Salt and pepper, to taste
- Leftover turkey or any protein you like
Toss all ingredients gently in a large bowl. Add in whatever leftover roasted veggies you may have on hand (Brussels sprouts, asparagus, sweet potatoes, squash, broccoli, cranberries, etc). This salad is full of flavors so get creative!! Enjoy beautiful mamas! Xoxo
