Fit Foodie Friday: Pesto Tortellini Salad

Summertime calls for grilling with easy side dishes for those evenings that are too hot to cook! I love this salad so much because you can eat it hot or cold and it tastes delicious both ways;). It’s a great salad to pack for a picnic with the kiddos while you are hanging at the playground or a family picnic after baseball or the park.

  • Cooked cheese tortellini
  • 1/4-1/2 c prepared pesto
  • 1/4 c sundried tomatoes
  • 1 c fresh or frozen peas, cooked
  • Optional: diced cooked chicken, cooked shrimp, baby spinach, artichoke hearts

Assemble all ingredients in a large bowl, adding pesto until tortellini is lightly covered. Toss gently to avoid breaking tortellini. We had this for dinner as a hot dish, then cold for leftovers served over spinach! Yum
