FIt Foodie Friday: Pickled Red Onions

Over the summer I had the most amazing salad with pickled red onions and started my search for a quick and easy recipe. This one has four simple ingredients and it’s quick and easy. The pickling juice mellows out the kick of the red onion and enhances its sweetness.

I made these onions to use on pork carnitas, but pickled onions are also great on burgers, sandwiches, salads or as a garnish on many side dishes, such as black beans. Try these—you’ll be hooked!
