I am one of those crazy pumpkin people, and I absolutely love fall! These muffins combine the flavors of our favorite seasonal fruits and veggies to create the most flavorful, warm and healthy treat! Not too sweet, but perfect with a cup of coffee in the afternoon. The recipe is simple; honestly the most difficult part is grating the carrot and apple. I omitted the frosting, but added some mini chocolate chips to some of the muffins to freeze the Luke. I made these as mini muffins to freeze, but full size muffins would be great too.
