Fit Foodie Friday: Quick Mango Salsa

I’m all about making a big batch of salsa to pair with several meals throughout the week. This recipe requires a bit of chopping, but once it’s done, you are set for 2-3 meals. It’s fresh, sweet, a little spicy and pairs nicely with many proteins and veggies!

Chop the following into a small dice:

  • 4 medium ripe mangos
  • 1/2 red onion
  • 1 or 2 jalapeños (depends on the spice you like)
  • Medium red pepper
  • Juice of 1 medium lime

Gently mix all ingredients and cover and chill for a few hours for the flavors to meld and get happy!

I used this salsa for 3 meals: BBQ chicken salad, salmon over quinoa and shrimp with grilled corn. This would also be great with pulled pork, over a quesadilla or in a simple green mexi salad! It’s also super yummy with tortilla chips. Enjoy beautiful mamas! xoxo
