Roasting vegetables is such an easy and amazing way to add more veggies to every meal. They are great on top of a salad, in a rice bowl, or as a simple side dish! The high temperature helps the vegetables get a nice, caramelized, sweet flavor. These carrots are super simple and dried thyme works just as well as fresh. We served this on a bed of quinoa with grilled chicken and it was warm, comforting and delicious!
