Fit Foodie Friday: Roasted Salmon over Spinach & Caramelized Onion Farro

This recipe looks like a million bucks plated, but is SO simple to prepare! And it’s filling and healthy.

  • 2 fresh salmon filets
  • Cajun seasoning
  • 1 cup cooked farro
  • 1 T butter
  • Sliced small onion
  • 1-2 garlic cloves, minced
  • 2 cups fresh baby spinach
  • 1/2 lemon

Preheat oven to 450. Rinse salmon and gently pat dry. Season to taste with a Cajun seasoning and rub liberally over the filets. Bake 12-15 minutes, skin side down, or until fish begins to flake. You can also use your grill to cook the fish. That WAS our plan, but it started raining;(

Melt butter in large skillet. Sauté onions on medium heat until caramelized. The onions will be light brown in color. Add the garlic and cook for 30 seconds. Add spinach in bunches until completed wilted. Add in cooked farro and mix, season to taste with salt and pepper.

When salmon and spinach farro are plated, squeeze with lemon all over. The lemon really makes the spinach and salmon flavors pop! Enjoy!
