This has been my go-to recipe for weeks because it’s super simple and works to eat right away, or for meal prep/leftovers! Costco and Trader Joe’s have some amazing chicken sausage links; I like the Aidells brand from Costco. The trick for this dish is to use veggies that cook at around the same rate. For example, I cook halved brussels sprouts, coin carrots and diced sweet potatoes on one baking sheet, and then the coined sausage, mini bell peppers and chunks of red onion on the other.
If I have baby spinach or kale, I’ll add that on top prior to serving. This is yummy over brown rice, quinoa or as is!
