Happy New Year to all of you beautiful mamas! I am so excited to share my love of cooking with you each week, where I will prepare easy, healthy meals, many of them kiddo friendly! My son even helped prepare this with me.
Here’s a gem I’ve been making for many years; it’s so well loved I have it written down on a hot pink post-it note. It’s easy, filling and makes your house smell like the most amazing apple pie is baking.
First, spray your slow cooker with non-stick spray. Trust me, you’ll thank me later! Next, put all ingredients in your slow cooker and cover. I like to use Granny Smith apples, but any apple will work. Also, make sure to use steel cut oats; regular oats will turn into a bowl of mush. You can adjust the amount of water based on how you like your oatmeal. I love mine a little more creamy, so 5 cups of water works for me. If you like a thicker consistency, cut the water by 1/2 cup. Cook on low for approximately 5 hours. You’ll know the oatmeal is done when it’s soft, but not mushy. Stir halfway through cooking to incorporate the ingredients.
When cooled, I divide the deliciousness into 5 containers to easily pop in the microwave for a hot, quick breakfast. I’ve also added raisins, cranberries or pecans as toppings. Nom nom! ENJOY!
1 c steel cut oats
4-5 c water
2-3 peeled/diced apples
1 T cinnamon
1 T brown sugar
1 t vanilla
