Grilled Mahi with Pesto and Broccoli

SUMMER!

'Tis the season for grilling! We usually grill our entire dinner and spend our evening on our deck soaking in the rays. This recipe is SO easy and tastes like a million bucks.

  • 2 mahi mahi filets (I love Costco frozen Filets)
  • 2 T Pesto
  • Olive oil
  • Salt, pepper
  • 1-2 crowns of fresh broccoli, cut into small florets

Rinse and dry mahi filets. Drizzle both sides with olive oil, and rub in salt and pepper (or any seasoning you like). In a large bowl, drizzle broccoli with olive oil, just enough to coat. A few tablespoons is usually good. Season with salt and pepper and toss.

Preheat grill to med/high heat. Place broccoli on a grilling tray or mat. Turn every few minutes and cook until the tops of the broccoli start to blacken.

Grill mahi 5-10 min per side, or until completely cooked inside. This really depends on the thickness of your filets. At the end of cooking, add 1 T of Pesto to each filet and close grill for a minute to heat.

I served the fish and broccoli over Quinoa! Very light and satisfying dinner. Yum!
