Luke is starting swimming lessons this week during dinner time, so I prepped this scrumptious Mediterranean Farro Salad to grab and go. So I’m cheating on my crockpot this week and sharing one of our healthy family favorite comfort foods — turkey meatloaf! I’ve tried a ton of turkey meatloaf recipes over the years, seriously maybe 10+, and this is the best one I’ve tried, by far. It has a zing from the ketchup and Worcestershire, is moist and comforting, but healthy! My almost 4 year old will even eat this (after protesting that he doesn’t like it, of course). ;)
