FFF - Roasted Squash and Black Bean Scramble.png

I love starting my day off with scrambled eggs—it gives me the protein I need to keep up with my sweet toddlers at preschool. But I get bored of eggs and am always looking for ways to elevate and try new things. This is my new favorite!!!

  • Grab pre-cut butternut squash and toss lightly with olive oil, salt and pepper and any other seasoning you that you like.
  • Roast at 450 degrees until the squash starts to blacken (about...
Fit Foodie Finds - TJ stirfry.png

ALERT, ALERT! This is our new obsession. You can find it in the frozen section of Trader Joe’s near the frozen cauliflower rice. I literally stocked up with six bags last time like a crazy lady ;).

If you crave Chinese food (like this East Coaster) but want something lighter, this is it! I heated the stir fry in my wok and added frozen shrimp until everything was heated through and the shrimp was cooked. Lastly, I heated up and...

I follow the recipe exactly as written, except I bump up the spices as follows: 1.5 T cumin, 1.5 T chili powder and I also add a teaspoon of...

Fit Foodie Friday - Pickled Red Onions.png

Over the summer I had the most amazing salad with pickled red onions and started my search for a quick and easy recipe. This one has four simple ingredients and it’s quick and easy. The pickling juice mellows out the kick of the red onion and enhances its sweetness.

I made these onions to use on pork carnitas, but pickled onions are also great on burgers, sandwiches, salads or as a garnish on many side dishes, such as black beans....

Fit Foodie Friday - Carnitas.png

I’m such a huge fan of Mexican and Southwestern cuisines! The flavors are so delectable and classic, I try to find new recipes which highlight those flavors of cumin and garlic. Carnitas are my go-to order when out to eat and I decided to experiment with this recipe and it was a huge hit! The limes and orange add an amazing citrus flavor, and the spices that are rubbed into the pork are simple perfection!

I followed this recipe...

Fit Foodie Friday - BBQ grilled shrimp.png

Summer is winding down, but that doesn’t mean grill season is ending! We love grilling shrimp as they are so versatile and take on whatever flavor you choose;). I gave these beauties a BBQ flavor and they turned out delicious. I typically buy large, uncooked frozen shrimp from Costco, and take out a bunch the night before to defrost in the fridge. Rinse well, pat dry, then get to work!

  • 1-2 pound fresh or frozen, defrosted...
